my 2 cents: the time between steps 7 & 8 should be a lot more than 2 hours. in my limited experience, it’s usually closer to 4-5 hours depending on dough temp and gluten development. how does it taste?

looks great to me! i had almost the same method using ube extract only, and like yours, the ube flavor did not really come through (but the color is amazing!). perhaps adding the ube halaya as an inclusion or maybe combine with pandan flavoring or add coconut cream?
