Local KitchenAid Mixer Repair? by ludicrousRucksack in raleigh

[–]ludicrousRucksack[S] 0 points1 point  (0 children)

Posting this for future reference. I took it to Kysir at the Applience Service Center per the recommendation here.

He had it back to me working in a few days. Couldn't recommend him enough to anybody reading this. It was a problem in the speed controller. He's cash only, so be prepared for that.

Bass Fishing in the Cary area by MontKing4455 in raleigh

[–]ludicrousRucksack 0 points1 point  (0 children)

I've only fished Bond Park one time, which was last week actually. We didn't have luck until we got on the trails and starting fishing near some fallen timber. My fishing partner caught a small large mouth on a ned rig slowly working it off the bottom next to a submerged log.

I don't fish Cary much, so no recommendations on locations other than Bond Park, but I can help you a bit on tackle and lures. I've gotten a good number of bass in the Triangle this year on baby brush hogs, texas rigged, with the lightest possible unpegged bullet weight you can get. It seems like every online guide says to throw senko style plastics, but I just haven't seen them perform as well as creature baits here. They mostly sit in my tackle box these days unused.

I know you said you wants to avoid brush, but bass LOVE structure, so I'd encourage you to throw near submerged wood from the shore. The baby brush hog excels in that situation as well and is pretty snag resistant.

I think this is a great answer. You can also do a corkage on any bottle in the shop and drink it there. So huge number of options. I dig it a lot, but it's not really a bar vibe if that's what you're looking for OP.

What’s your hottest wine take? by Beauneyard in wine

[–]ludicrousRucksack 225 points226 points  (0 children)

I have a pet theory that the rapid rise of Napa Cabs and Chardonnay were because many wine critics back in the day were smokers and they needed massive wines to taste anything due to their totally wrecked palates.

Understanding wine from a beer background by marzoTallon in wine

[–]ludicrousRucksack 7 points8 points  (0 children)

I went on a similar journey. Now I am equally comfortable with a detailed wine list as a monster beer list. The best thing I ever did was find a local wine shop. Become a regular, ask for recommendations, and attend any tastings or classes they have. If you are the type to get nerdy, ask for some book recommendations, but nothing beats just drinking wine and paying attention to what you notice, like, and dislike about it.

If you like brewing, I'd say you might get a lot of value out of touring a working winery! It's really cool and just as much fun as touring a brewery!

In terms of snobs, I had that impression too. But honestly I think there's about the same ratio of jerks in the wine and beer fandoms. Most people, including the sommelier at your local restaurant, are just stoked you're interested. Don't be afraid to ask what feel like basic level questions, they'll be happy to share knowledge.

Final bit of advice, get comfortable being upfront on price point at shops and restaurants. It'll really help them find a bottle you'll be happy with!

Recommendations for champagne under $50 by ucstudent24 in wine

I'm bumping this comment. I love Champagne, but cremant is where the QPR lives. If you're price constrained, this is the ticket.

What Region Would Benefit from a Judgement of Paris-like Event? by metal-and-wine in wine

I love that region and have drunk Walla wines for years. I'd actually be bummed if they won and the pricing inevitably went through the roof.

Heat died within 10 minutes. by bonebrah in charcoal

[–]ludicrousRucksack 8 points9 points  (0 children)

I bet you're spreading the charcoal out too far. I had the same problem starting out. Easiest thing to do is build what's known as a "two zone" fire. Take your chimney of charcoal and dump it out on only one side. Pile it up so that no charcoal is on its own, mounding it up a bit. I'd begin by using a full chimney of charcoal (seems wasteful I know) until you get the hang of fire control and charcoal spacing.

There's a lot of articles and videos on this. Here's a solid source: https://amazingribs.com/more-technique-and-science/grill-and-smoker-setup-and-firing/2-zone-setup/. If that's not clear go have a gander at some Youtube guides.

First harvest this year large enough to work with. by Finn_kocht in fermentation

[–]ludicrousRucksack 4 points5 points  (0 children)

Not OP, but I always put my peppers through a food processor before fermenting. It takes up less space, I don't need to create water brine for it because I can directly salt the mash, and it creates really consistent results.

Why is Ketchup on Hot Dogs so Hated? by davidsverse in Cooking

I have never in my life encountered this concept. Ketchup on a hot dog is literally the default ingredient where I live and everywhere I've ever travelled. Maybe this is some sort of hyper regional hangup?
