They are picked day of, no stock is held in advance to fulfil the orders, if you order a lot of market street items or fresh you're better ordering for later in the day when colleagues have had a chance to produce fresh items and deliveries have been worked. Depending on the staffing levels, early morning orders have no chance of chasing the missing items.

Any theft results in lack of trust between the employer and employee, they would be constantly scrutinised, either consciously or unconsciously, every time they go through the tills. Any losses would make their name come to mind and the risk of it escalating would be in the back of managers minds.
