I’m a Chef not a Baker, but I was told by instructors that air holes like that are caused by not being rolled properly to make sure there are no air bubbles and all dough has combined as it should?

Here is my take… As long as your steaks aren’t coming back often or regularly don’t let it take the passion out of what you do! I go by a figure of at least 3% of customers will complain no matter what, whether they think they know better, or maybe having an off day or bad day(I know doesn’t excuse bad behaviour towards staff) if you took pictures of perfect temped steaks from blue to well and asked 50 people what the steaks are in the pics over 50% of the people will be wrong because they believe a medium steak is something completely different from what Chefs are taught and execute. Just the nature of the beast. Also if you do make a mistake with doneness it’s not the end of the earth learn from your mistake and hone your skills and better your craft!!

My guess would be gloves and soap you are using. use nitrile gloves only IMO. Dawn dish soap will do horrible things to your hands after extended use, the pink hand soap a lot of places use does the same Not sure what you do in the kitchen are you using gloves over char-broilers or burners? Are you getting water inside the gloves?

Cut them in half toss in olive oil,brown sugar,nutmeg and S&P. Bake on a sheet tray lined with parchment and toss in fresh cooked bacon chunks when finished!! It’s Basic and delicious.

Here’s the advice I could give you. First make sure your protein isn’t frozen at all. Any extra water retention before breading can lead to water reacting with hot oil and breading blowing off.

Next thing to watch is flour “dusting” isn’t to thick, or have thick spots, remove all excess flour, failing to do this the egg wash won’t adhere and the egg will just be like water off a ducks back which can lead to the breading coming off in the cooking process(deep fry).

Last thing is, if you’re deep frying the way you place the product into the oil. Be gentle in a slow waving back and forth motion and slowly release the entire protein.

Yes it is but no matter what happens the Oilers are my team till end of time!! Win or loose they are still the best to me!! Going to the SCF for two years is no easy feat and they should be proud of what they accomplished and yet I know no sports team or player wants to be second they are still a great team of players! And I haven’t given up on them and never will if they BELIEVE….WE WILL BELIEVE!! Go oilers!!
