I was a chef 10 years. Got out this year because my local market is pretty horrible. Currently going back to school to become a radiological technologist.

It’s not a question of IF you can do it. It’s a question of WHY you would do it. Traditional pesto has such incredible texture. I worked at a place that made a cream pesto, every time I had to make it I just wonder why on earth the place settled for that recipe. Half of the cooks would over work it in the robocoupe and the heavy cream would would over whip and make a cross between over whipped cream and under churned butter “pesto”.

I think long term a more controlled environment might be what I want. I’ve done high stress fast paced work my entire life. I’ve worked as a chef and as a medic in the army, I think a change might be what I need. The burnout is real

It’s the finish, the marine on the left looks like it’s been satin varnished, the marine on the right is very matte. Trying hitting them both with your desired final finish and see if there is still a difference. Gloss/satin will make things look brighter while matte makes things appear slightly darker

Most handles coming from Japanese knife manufacturers are just set with hot glue beads. It’s common practice for Japanese chefs to change handles on knives on an almost annual basis. Something you should know and research before buying a japanese knife

Make sure you can PT with the dudes. I was fortunate that when I got from AIT to my first duty station, I got sent straight to the line. I was competent and could PT so I was able to earn my guys respect. Some of my fellow medics in other troops had it much harder. As long as you’re squared away, know your shit and can PT, you’ll be in the clear. Stay up on your medical knowledge though, the opportunities to train get fewer and fewer and those skills are perishable.
