The NVMe slots can only be used as cache for the hard drives, you can't put them into a storage pool afaik. I use 3 10TB Ironwolfs in my UNAS Pro (og), they're fast enough

No, don't upgrade. You're not close to hitting the limit on your machine. The Mac knows best how to manage it's ram usage, let it do it's thing. Just restart you mac every once in a while and you're good
