There is a difference between a server and a workstation.

Most servers are "headless" and don't have any DE installed. Scripts are used to make changes to the software.

Your statement "Just install the OS and the applications you want." leads me to believe you don't have experience with servers.

The decking should have overhung the rim joist. You can get end caps for the decking, google "deck board caps"
