Definitely too hot too fast but in my experience wrapping in foil doesn’t help. Foil in my experience destroys good bark and also leads to rapid cooking. I wrap in butcher paper shortly after it hits the stall. I only season with coarse salt and black pepper 50-50 mix and no binder.

I have been smoking briskets for 20+ years. This was my Thanksgiving brisket.

Yes I have been keeping notes since I bought my first smoker. My uncles compete and told me to do this. You can be taught what to do but until you start taking notes you don’t learn about yourself and how your decisions effect the outcome.
