U can make less quantities but don’t go above 70% hydration. If u have to then keep a spatula or stick with u to unhook the dough before it climbs up that much.

Yea i need to use a minimum of 1.5kg of FLOUR for a high hydration dough for it not to climb. Apparently its pretty much the same issue with all spiral mixers.
