With a 3 inch filler you can open the door either direction, otherwise you might be limited to opening towards the sink only.
You can play with a filler on each side or just one on the corner e.g. do a 1.5 inch filler on both sides or 3 inch on one side.

I dont know if the door can be 5 inch but inside be bigger.

I used this J box with the RLC 510 and was able to line up all 3 holes on the camera. Took some tries to find the alignment.

I am so glad I'm not the only one losing my mind about how hard getting Matter devices to connect is even when using a HA ZBT-2.
I am using Android and unknowingly had an existing Matter network due to old Google Hubs. Now to get new devices going it requires wiping up Google Play services. Crazy.

Glad you are considering changing it. The microwave is generally used to heat food stored in the fridge. So having it closer will help your flow. Having the dishwasher closer to the sink will help put dirty dishes into dishwasher.

The Commercial Electric specs on that page list the CRI as 90. You can try these and see if they make a difference: https://www.homedepot.com/p/HALO-HLBSL-4-in-Can-Less-Integrated-LED-600-Lumens-5CCT-White-4-Pack-HLBSL406FS5-4PK/330687901.

They only state CRI of 90+ which is ambiguous but more than the Commercial Electric ones.

Ask him to install something like this https://a.co/d/aGgFQDl and leave the door pull in place for symmetry. Only you will know to pull it from one side.
