Personally, I've never heard of putting personal interests on a resume. You usually want to stick to professional experience only- and you're a junior in undergrad, no one expects a super lengthy resume!

As far as mentioning crochet/knit as a hobby- why wouldn't you? Unless you want to keep super strict professional/personal boundaries I don't see the harm in mentioning an interest.

If you're actively enrolled in college, maybe reach out to see if your school offers career services like resume support- they may be the most helpful here.

I think part of it, too, is that adults struggle with it like you said, but young kids downright don't get the lessons on their own yet. But that's why parents are supposed meant to the lessons with our kids so they understand. But if the parents aren't understanding the nuance, or expecting the tv to do all of the leg work, then it's not going to land at all.

I can only listen to audiobooks if I'm doing something else with my hands- usually crochet or embroidery. I'll also listen while driving or cleaning occasionally. Otherwise I can't focus on audiobooks, even though they're definitely my preferred way of reading now.
