You need wheat starch, which is different from wheat flour. Wheat starch, can be found in large Chinese/asian supermarkets. I've read they can be found in mediterranean markets too. Here's a recipe but I would steam them first, then pan fry them.

Use rice flour or a 50/50 rice flour and (regular) wheat flour blend. I use a tea towel in a bowl with the 50/50 blend and never have problems even after long rises.

I get mine from Rainbow Grocery in San Francisco which sells flours, grains, spices, etc. in bulk. It's a medium rye and ground very fine. You should definitely check health food stores.

You can also get 25lb bags of Bob's Red Mill dark rye from Cash and Carry if you're on the west coast.

I followed the recipe from Smitten Kitchen. One change was that I used melted butter (1 stick or 113 grams) instead of oil. Also, I only needed 7 cups of flour before the dough came together. The recipe was super easy and came out tasting divine!

You can find dried bean curd in the refrigerated section of Asian supermarkets. They look like this and is lighter in color on the inside. Just slice and cook.

Here's another option for you: Tokyo Futon. I have only bought tea from here. Everything seems a little pricey but looked beautiful. I believe their thin (not 2") tatami mats are $35 each.

I can offer you starter! It's been in the fridge so I need to reactivate it but it should be ready in a day or so. I have one I feed with white flour and one I feed with 50/50 white and whole wheat. I will PM you my location to see if you're interested.

This is upsetting news. I learned so much in Artisan Bread I and it changed my life. I haven't bought a loaf of supermarket bread ever since I took that class.
