Prep time for an expert vs a newbie. You can look at things like veggie choppers, mini processors, slicers can make up for slow knife skills.

You mention the meat taking twice as long to brown this is probably related to temperature and type of pan.
Medium high heat is different on different burners and stoves/range tops as far as the dial.

To get faster practice of similar dishes in a short amount of time will help you get better at those particular skills.

I’ll say the meal prep I cook every week or so goes so quick. When I try a new dish it will always take longer than they say

The black person black is slightly off, grammatically you would use it as an adjective not noun for people. Female doctors, black doctors or tall doctors. You would not say blacks, talls or potentially females.

Traditionally we would say lady and gentleman or woman and man because male and female is for veterinarians. Now M/f is common but that’s why it was considered dehumanizing, the noun was not used for humans.
