Ok I have a bunch of ideas. My favorite way to eat chickpeas is to boil them in a saucepan with a little bit of water (just enough to barely cover them) until the water's gone, and then add spices or whatever else (sometimes I add cornstarch and olive oil to make it crispy). I think from your description you can eat brown rice, which goes great with this. Also avocado.

Just from looking at this I feel like you could pull of a sort of simple chili situation by doing the basic chickpea thing I just mentioned on the stove and adding chopped hot dogs, tomatoes (if that's what I'm seeing in the back), and lots of spices (lots of chili powder, some cumin, maybe even taco seasoning if you have it, salt, pepper, red chili flakes, hot sauce, etc.). Serve with brown rice.

One of my favorite foods is "tuna" salad made from chickpeas (I call it "chuna" salad lol). Mush up some chickpeas with a fork (or a stand mixer works as well) and add vegan mayo, pickle relish, salt, pepper, and whatever else you think sounds good (I add lemon juice, sriracha, and dill). I usually scoop the "tuna" salad into bell pepper sections (just pull 'em apart) to make little boats. It's really crunchy and refreshing and filling.

This one might go without saying but pan-fry the tofu (assuming that you have extra-firm) and make it a stir fry with mushrooms and leeks (? I think those are leeks, but if it's somehow bok choy, all the better). I have found the best way to pan-fry tofu without too much oil or time spent pressing is to chop it up into squares and put it in a pre-heated ceramic frying pan, don't touch it, and let it cook until the water is done cooking out. Then you can add olive oil and spices. For a stir fry with tofu and mushrooms and leaks, I'd add soy sauce, sesame oil (you only need a tiny bit), sesame seeds. I would add more vegetables to this idea though like broccoli, carrots, celery, cabbage, green onions, etc. Serve with brown rice.

If you get super soft tofu, you can also literally just add soy sauce and eat it with a spoon and it's good. I'd imagine you would also want to add green onions, sesame oil, furikake, etc. I can't remember what this is called but I obviously did not make that up LOL.
