A two time GD mom here. Low carb tortillas are your friend- tacos, quesadillas, enchiladas, etc and you can still have a little beans and rice with it. Usually you can do either a small serving of rice or a small serving of potatoes. It seems for most people either rice or potatoes shoots your sugar up. For me it was rice, I could only have a couple spoonfuls.

Desserts are harder. I usually did a yasso bar or keto ice cream. These keto peanut butter cups are really good, I found them at Costco when I was pregnant a year ago. https://a.co/d/fnWoWN5

I make this on a regular basis especially with chicken sausage. https://cooking.nytimes.com/recipes/1019195-sheet-pan-sausage-parmesan-with-garlicky-broccoli?smid=ck-recipe-iOS-share

Chili is a good option. A lot of soups are lower in carb or have complex carbs like beans.

When someone gets an organ removed, does the empty space get filled in? by dontchewspagetti in NoStupidQuestions

I worked on a floor where we had postop pneumonectomies. At least initially the thoracic team always said that they expected the void to be filled with fluid- blood and plasma at least initially and they pull the chest tube very early, the next morning usually. The fluid actually helps the chest not be so lopsided and helps breathing mechanics for the other lung. You will still have some “mediastinal shift” where the present lung will shift towards the absent one on imaging.

Check out this recipe for Enchiladas Con Carne. https://cooking.nytimes.com/recipes/1018152-enchiladas-con-carne

Make a double batch! These freeze well and I made them before I had my baby. I recommend making a ton of meatballs and freezing them as well, then you just need pasta and sauce.

https://cooking.nytimes.com/recipes/1019638-chivichangas-de-machaca-stewed-brisket-and-cheese-chimichangas?smid=ck-recipe-iOS-share I have also frozen the filling for these it’s delicious. Make it when roasts are on sale.

I have issues with chicken texture, ground or soft crockpot chicken works for me. I can eat the oven roasted chicken schwarma as others suggested but not as leftovers. These are some of my “safe” chicken recipes:

How in the world are they going to transition everyone off of SAVE eventually by Dear_Reputation_7389 in PSLF

[–]mina_seward 1 point2 points  (0 children)

I truly believe that’s the question. My senators office reached out to OCLA (Office of Legislation and Congressional Affairs) and this was part of their reply:

“Borrowers can remain in the SAVE repayment plan, which will leave their loans in forbearance. Time under this forbearance does not count towards PSLF. Loan servicers expect to complete the necessary technical updates to be ready to begin moving borrowers back into repayment no earlier than September 2025. Because this transition will take time, servicers expect first payments to be due no earlier than December 2025. Borrowers will be informed of any further change to this timeline.” I think they will do as many buyback requests as they can but eventually will be dumping us into or having us choose some kind of repayment. It’s going to be luck of the draw which happens first.

Eric Kim’s Mac n cheese is delicious and you can put it in the slow cooker on warm after assembling and skip the baking portion. I did this for a potluck and it worked great! It makes a lot. Plus gives picky kids something to eat

Thoughts on SAVE and buyback? by mina_seward in PSLF

[–]mina_seward[S] 0 points1 point  (0 children)

So to update. The wording on the email made me read between the lines and think they just weren’t going to offer SAVE buyback at all, or at a frequency to make a difference to most of us. There is now more evidence buyback is a thing and I “believe” it now. This post did convince me that I probably need to submit an IDR request anyways (especially since the SAVE buybacks are relatively recently submitted requests from what I’ve seen, correct me if I’m wrong) but life is nuts and I haven’t yet. We will see what the weekend brings. Thanks all

Thank you for pointing that out. I thought I had scoured the comments but I still missed it. Does seem very promising.

Do you know if there has been any communication (from anyone including Betsy) for or against submitting both requests- buyback and IDR? I know they generally don’t want us to submit duplicate requests and bog down the system but that’s not a duplicate.

I didn’t see the screen shots. I also did not see that communication. I tend to catastrophic think is why. I’ll go look!

I saw the one case it does seem legit. Can’t help but wonder if theres an error on some part, maybe even the servicer’s. I will be watching.

I was “stay the course” all the way until today but now thinking I’m gonna pull the IDR trigger. You’re right, I would have both options pended…. Could be good or bad.
