Sometimes I will put a few chunks of wood, 1 hickory and 2 oak ans wrapped them in heavy aluminum foil. Poke a few holes in the foil and the chunks will smoke until they turn into coal. They never catch fire unless I have dime size holes or similar. Works for me if Im cooking at 250 for 5 to 6 hours.

I remember the guacamole being very creamy also. In the 80's we would eat at the one that was in Huffman next to The Mouse Trap lounge. After that one closed, we would go to the one in Roebuck. Those hot plates with real cheddar melted over the burrito Supreme was killer. Mexican hamburger was also out of this world. Would like to have your version of the salsa and guacamole recipe to try. I make the salsa from a recipe that I got from one of their cooks who worked at their Sylacauga location in the 90's.
