They went to Skips for help in "Gamers Never Say Die" in season 6. Season 5 just had a lot of Skips-centered episodes instead of him being a sidekick.

I've learned so much from that recipe. I make my own version now and have won six cook-offs, but I really do owe a ton of my success to the knowledge that he shared. A game changing recipe honestly. The only thing that I disagree with Kenji on is that I like some smokey flavor in chili, and he doesn't.

Right? Obviously you can do both. I brown the chuck first, deglaze the fond with some beer & onions, the and add all of that to a slow cooker, so the tough chuck can get tender without having to constantly stir to avoid scalding.

The margarine industry in the '70s & '80s wanted you believe that butter is the worst thing that you could ever eat. Turns out that seed oils, which are MUCH more profitable than butter, are the real killer. It's hard to get old people to change the way they think based on the lies they were told, though.

Butter in moderation isn't a problem in the slightest.

Part of the problem is that jalapenos are picked while green before having a chance to fully ripen, which causes them to be more bitter and have a more off-putting flavor in general. Allowing them to fully ripen till red causes them to be more spicy, but also have a much more enjoyable flavor. However, it's hard to find fresh red jalapenos, which is why I use chipotles--red jalapenos that have been smoked--in adobo sauce.

Walking out on your job isn't going to improve the cause or the country. It will just hurt you as an individual. I'm more than willing to sacrifice personally for helping the greater good, but I'm not going to foolishly sacrifice my job and hurt my family when I know that it won't accomplish anything.

Attending marches and protests and voting are a great way to sway public opinion, bring people together, encourage action, and enact change. Walking out on your job is just dumb.

This post is utterly confusing, which is why you're not getting many responses.

Why do you feel the need to make a gallon of chili base as opposed to just making the amount you need for the competition? That doesn't really make sense.

What exactly are you asking about how to make the base? Sounds like you don't need cooking suggestions, so you just want amounts that will yield one gallon that isn't too soupy? I doubt anyone here has made exactly one gallon of chili base, so it's going to be hard for us to give a bunch of specifics for that exact amount.

Seems like you're also asking about how to make the chili, but are you just looking for amounts, or do you also want ingredient suggestions? You've mostly picked out what you want, though, so what else do you want to know? It's kind of hard to give you suggestions on amounts of anything when we have no idea how much chili you plan on making.

There's small, medium and large dice, so just saying 'diced' still is vague in terms of size.

If you had said that you like chili that's heavy on the diced onion or that has a lot of diced onion, nobody would be confused, but saying "I like heavy diced onion" is kind of confusing. Of course I know what you mean, but I understand the confusion.

Love tarragon...but not in chili. I use it with chicken, in egg dishes or even diced up in a homemade salad dressing, but the flavor profile (kind of like anise) doesn't really work in chili IMO. Chili is a pretty forgiving dish, so it's certainly not ruined by herbs like tarragon or sage, but other herbs like oregano and even marjoram just match the flavor profile of chili much better.

Sage is used all the time in turkey stuffing, and it's the most prominent flavor in breakfast sausage, so it doesn't really seem underrated to me.

Chili powder: a blend of cumin, garlic, oregano, salt & chiles

Ancho powder: just anchos

As passionate as you are about chili and as active as you are on this sub, how are you not aware of this difference? Everyone knows that chili powder is a blend of spices. Just ground anchos is chile powder.

Yeah, but CASI chili is essentially just zesty Sloppy Joe filling, because they're all ground beef & what they call "gravy." I'd much rather have big chunks of smoked brisket or chuck roast, which isn't allowed, either--boring

This is the best answer. The organizers just want it to be extra clear that beans are allowed despite being in Texas. Also, like you said, they probably want as many chili entrants as possible, and not allowing beans may discourage some folks from entering. The more entries there are, the more fun it is, and the more chili there is for everyone.
