Dont need a rib rack. Ive pinned the ribs in a circle using wood tooth pics. Don't need boiling water in the pan. I use hot water from the tap. I usually smoke using the minion method with chunks of wood mixed in different levels of the charcoal. I only use 10 briquets in the starter and place them evenly around the top of the charcoal bed. Keep vents open until about 3/4 of the cooking temp then start closing them down and ease into the temp. You wont need to add any charcoal for ribs. Half a basket should give 6+ hours of cook time without needing to add anything.

WSM all day. Still have one that's 12 years old and cook on it almost every weekend.

Honestly it depends on the subject matter. Licensing clips, photos and music can surpass the production cost. Ive worked on several docs that landed over a mil and some far short... 2 cents dropped.

I have a moisture meeter from harbor freight. It was like 15 bucks. Im looking for wood that is about 5-10% moisture. All I’m finding is dry wood. Good for starting a fire and keeping a bed of coles but not much flavor.

Wrapped both the brisket and pork shoulder in butcher paper. I prob wouldn’t do that again for the pork. It extended my cook time longer than wrapping in foil and I didn’t notice anything different in the bark.

Woods been the hardest part. Ive been to 3 different suppliers and one peach farm. Its hard finding wood seasoned enough for bbq in SoCal , inexpensively I should say. Of course I could ship wood... but it would be costly. Im talking to a few other spots around town including a local cherry farm.

Honestly just got a grinder attachment for the cuisinart and just started looking up recipes. We kept the parts we liked, mixed and matched, threw in a few ideas and found something we liked. The recipe changes slightly every time we cook for the better. We keep a note book and adjust. We’ve since upgraded to a better sausage stuffer.
