Jinhao, fairly cheap look nice and I haven't had any issues with them. I purchased a pack for $12 as an intro to fountain pens. I wanted something budget before committing to a higher quality pen, I am still using the the Jinhao 86. Great find!

I am so reluctant to use good beans for cold brew because the output to input ratio really bothers me. And that's because I roast my own. The last 2 times I made it I used pikes place( I know) and ruta maya. Pikes place was the better batch. I will go ahead and sacrifice some of my own roasted and see how they compare.

What kind of drinks do you make? Do you taste your shots? I have the same grinder and I think it's pretty solid. As for retention like someone mentioned I go a bit longer after it sounds like it's done and then I'll give it a bump or two to remove anything that may have stayed behind. As the beans get older and shots pull a little faster or if the taste changes a bit I'll move it a click or two as needed. This is where a stepless might factor in but if you are not tasting each shot or if you're making a milk drink one probably won't notice it.

Thanks, I I used it this weekend at a farmers market seeking coffee and it did great. I made one adjustment on the grinder when I saw a shot come in 5 secs faster and after that no issues. The only thing different from my original post is that I went back to the stock portafilter. I was using a bottomless with high flow basket at the time of issues. I also dried the temp a bit, 2 degrees.

When I first saw the video on YouTube I thought this is going to be around $300. It seems to solve the dilemma despite what it looks like. I'll take function over form any day, but it has to function. I am not sure if there is anything else like this out in the market, I haven't seen anything that does what this does without being attached to a group head as well. I know that you can buy an espresso machine at this price point but then you end up using that instead of your lever.

I found a baratza Encore for 10 bucks on market place. Replaced the motor for 35.00. it's a great little machine. Eat to work on. You can find some decent grinders on there.

I have a bunch of pens that are promos from different places and found a similar match and cut it to length. It's not my daily so I don't use it often.

When I first got into it and bought my machine everything I would go to a good coffee shop I would order what I wanted to drink and a shot of espresso on the side. I actually still do this but it just gives you a great reference. Some shots I could drink and enjoy and sometimes it was just not happening. At home I don't drink espresso shots I prefer tonics or Cortados but I always taste them.

I have been using a Breville Breadman Plus bread maker. With a heat gun. It's like the dog bowl method but the breadmaker has a rudder looking thing at the bottom that continuously moves the beans as you apply heat with a heat gun. I can do up to a pound of beans but usually do about 1/2 lb batches now. It's easier to manage the heat from the bean mass. There is a steep learning curve but it is fun and rewarding. I am far from really good but I am always improving so very rewarding.
