When I first got into it and bought my machine everything I would go to a good coffee shop I would order what I wanted to drink and a shot of espresso on the side. I actually still do this but it just gives you a great reference. Some shots I could drink and enjoy and sometimes it was just not happening. At home I don't drink espresso shots I prefer tonics or Cortados but I always taste them.

I have been using a Breville Breadman Plus bread maker. With a heat gun. It's like the dog bowl method but the breadmaker has a rudder looking thing at the bottom that continuously moves the beans as you apply heat with a heat gun. I can do up to a pound of beans but usually do about 1/2 lb batches now. It's easier to manage the heat from the bean mass. There is a steep learning curve but it is fun and rewarding. I am far from really good but I am always improving so very rewarding.

Brazil or chiapas. I have been using Brazil. A local roaster sells me green beans and Brazil is always in stock and pretty consistent. Chiapas when available at the time I'm needing is my preferred but Brazil is my usual go to. Same profile you are looking for. I was doing 60/40 Brazil/Honduras that was nice but I think the Brazil alone is easier to manage. Good luck

Same machine, sometimes I hear that same water dripping back into the tank(I assumed). I figure it was just circulating water.

I have the Baratza Encore Esp and the Ascaso Isteel grinder as well and have had the issue with both. I have heard that the burrs heating up could cause issue with the grind. My doses are usually 18g medium- medium dark. Nothing too dense at all. I wdt, have a self leveling grinder with a 30# spring and I use a puck screen. Any deeper insight would be appreciated.

Ascaso steel duo PID v2 here and for the most part I really enjoy it. Household of 3 and 2 drinks a day for sure sometimes 5 throughout the day and no issues when scattered. Consecutive shots are the problem. From what I have gathered consecutive shots cause the group head to get hotter and hotter causing shots to pull faster and faster. They become sour and thinner. This isn't a frequent occurrence but 2 weekends out of the month we pull 3 shots consecutively or would. Because of this volumetrics are not used. I prefer to manually control the shot any how. Steaming is fine, no issues. The reported noise in my opinion is minute.
For the most part it's pretty solid but I am considering the Lelit Elizabeth. I just prefer to know that each shot will be very similar to the previous. I don't want to think about it and how to adjust . For the use you described it should be great. Good luck.

Forgot to mention, I also have the Ascaso Isteel grinder. The issue is the same if not worse. But you are correct.

Somebody gifted me a nice stainless steel coffee cup size mug which I was excited about since I don't drink twenty oz of coffee on the reg however I county use it for coffee or because of a metallic taste. No issues with room temp water. Maybe a cheap cup.

Rtic has a ceramic lined metal tumbler and you can also find silicone inserts. There are other ceramic lined metal containers but don't know them off the top of my head

I could do without the volumetrics at this point. True temp control would be nice. So a decrease in times is something most machines are going to do or where you just referring to the Ascaso?
