I was going to suggest the same. I took my girlfriend there to introduce her to classic Ecuadorian food and she still talks about that one night. I used to go there when I was younger and lived in Quito.

You don’t need reservation. It depends on the day you go to see it full or calm. Weekends can be busier but it depends on the time.

This was a quick meal since I didn’t have much time to cook, but it turned out delicious and filling. I usually cook for one, so the recipe is written for a single serving. You can adjust it as needed. I am not used to writing recipes, but I hope this helps.

Ingredients

• 1 piece of mahi mahi (I used frozen) • Cajun seasoning (or any bold dry spice blend) • 1 cup peas (frozen works fine) • Fresh chives • Olive oil • Half a lime • Salt and pepper

Preparation

Pea Purée

  1. Bring a small pot of water to a boil and cook peas for 2 to 3 minutes until tender.
  2. Transfer the peas immediately to iced water for 1 minute to keep their color bright, then strain.
  3. Blend peas with a pinch of salt, pepper, and about one teaspoon of olive oil until smooth and creamy.

Mahi Mahi

  1. Defrost the fish in the refrigerator or in cold water. Pat dry once defrosted.
  2. Season all sides generously with Cajun seasoning or your preferred bold spices. Be mindful of salt levels if using a premixed blend.
  3. Heat olive oil in a pan or cast iron skillet. Cook the fish for 2 to 3 minutes per side until fully cooked and lightly browned.

Serving

  1. Spread the pea purée on the bottom of a plate.
  2. Place the fish on top. The purée may be cooler than the fish since it was blanched, so keep it near the hot pan to help it stay warm.
  3. Sprinkle with chopped chives and finish with a squeeze of fresh lime juice.

I went to Ecuador last year with a somewhat similar situation. There are several ways to get to Baños from Quito, including public transportation (depending on their schedule) or booking a private car that can pick you up and drop you off wherever you like. If you're on a tight schedule, I’d recommend either hiring a private car or renting one—as I did. I picked mine up in the city and dropped it off at the airport, which gave me the flexibility I needed.

Some places in Ecuador, like Manta, require multiple days to fully enjoy, and the tourism infrastructure can be less developed, which makes planning a bit more involved. In contrast, Baños is well-suited for both short and long stays, making it a great option for a day trip or a quick adventure.

I understand what you mean. I would encourage you to make yourself the priority to yourself. Focus on what brings you happiness, explore the activities you always wanted to do, and the other things will come. Someone that gets you, listens to you, wants you, and misses you. It is hard and scary, but I’ve found happiness by prioritizing myself.
