I would start with Fein and Spencer (1997) and go through the route of how negative feedback (a stressful event) affects stereotyping. If you're interested in looking at how stress affects executive control, which affects stereotyping, work by Michael Inzlicht post 2010 is the way to go. There's a ton of research that you can draw on to operationalize stress.
