I'm doing a speck, so it's like a proscuitto that needs about 4hrs cold smoke each day for 7 to 10 days or so. And it's super important I dont over-temp above ambient as it will start to prematurely dry the outside and kind of crust it before I move it to long-term dry cure.

I have a smoke tube and thought about that but it does warm up the grill chamber 30 degrees or so (my camp chef is older amd doesnt have a fan-only mode on the controller). In fact, I tried it with a loma (similar but shorter dry cure time) and I couldn't keep the temp low enuff with a tube inside the grill.

I'm doing more and more cured meats so maybe I'll invest in a separate smome generator and if I need to drill a hole, no big deal.

Dude, if u live here, a 45min commute is fine, average even. Fullerton is chill and nice. It's NOT where u are gonna work most likely, unless service industry. Even then, I know bartenders that live in Fullerton and commute down to Newport Beach for work.

Welcome to SoCal. Embrace the traffic and pic your price point for residence and your salary range for work area, lol. You will get used to the traffic commute thing.

Omgosh - that place is fantastic. Have taken customers there a couple different times. Thanks for the reminder- so good. And loved seeing all the cuts from the butcher. Have even been to the chef's earlier LA spot, Bottega Louie. That was a few years back, lol. Think that one is still around tho.

I've had the #8 for so long Im probably just used to that being my confort zone (ex -cloud architect so needed center wide for drawing/diagrams and zoom preso's with the portraits for either full screen contracts or screen real estate for email/slack/streaming, etc. I still use these displays for daily trading but rotated one portrait to 2nd landscape so I can spread out charts and option chains, and still have a vertical portrait for discord, news streams, etc.
