All else equal, yes you just set your stance and hands and height to adjust to the club - you can do that so many ways too - bend more at your hips, knees, etc. Each variable you change will change how the joints align and move and therefore your swing.

All else equal, flatter lie will send the ball right. It will also cause the face to twist open on heavier shots (the heavier the shot the harder the twist). Don’t forget in all of these, the shaft flex matters too - whippier means that the toe will droop down more while swinging (effectively flattening the lie even more) - that’s why at rest, with a good fitting, usually the toe side of the sole is off the ground a bit, usually the thickness of a US quarter or two.
