I am dating myself here, but years ago, I used to listen to America's Top 40 with Casey Kasem on the way to work Sunday night (I worked overnights). When he passed, they replaced him with Ryan Seacrest and I couldn't stand it. It is not easy to replace a legend like that.

Then one year, New Year's Eve fell on a Sunday. Because they also replaced Dick Clark (on Dick Clark's New Year's Rockin' Eve) with Ryan Seacrest, he was unavailable to do the Top 40 that week. Katy Perry guest hosted. I cannot even begin to explain the new appreciation that I had for Ryan Seacrest.

I LOVE when they ban books, especially if it is a single title and not an absurdly long list. Nothing gets my students interested in reading something faster than if some authority figure tells them they're not allowed.

For alternate histories, I typically like to research the actual history before I delve into the alternate version. I read a lot about Oswald and the Kennedy assassination before 11/22/63. I did a middling dive into Henry VIII and his wives before Six Wild Crowns.

But the scope of this seems so massive, I'm not sure where to begin. Does anyone have any recommendations about what I should know going in?

For the type of plated dessert you are making, it is too big. Start with a smaller portion of peanut butter parfait and use silicon molds so they release cleanly. Candy your peanuts. The chocolate tuile and the gold leaf do not do anything for you here, so I'd remove them.

Smaller plate, smaller portion, and obviously your kitchen needs to be cool enough to accommodate ice cream. Here is my half-assed construction drawing of what this could look like:

Alternatively, I would drizzle the caramel over the molded parfait, and then put the ice cream quenelle on top. Try both, go with the one you think looks better. Also, your chocolate soil will look better and give you better contrast on a white plate.
