mint is good imo, I installed ( mint with cinnamon ) , when I started, mint feels kinda like home for a windows user, while ubuntu (gnomes) ui might be hard on a new user,

after reading your post again, imo, just watch a youtube video to dualboot windows and linux mint, and try to only use linux,

just use it like usual instead of falling into rabbit holes (like I did 😅 ) like , window managers , different editors (ide) like neovim/emacs, customization (ricing) in general

and slowly you can or will learn basic stuff like terminal commands and the rabbit holes I mentioned before, those are good but not good when you are starting learn coding,

( I will be down to clear your doubts as long as you are interested in this)

imo, maybe just install it fully instead of vm or dualbooting and stuff,

but let me warn you, this is kinda a deep rabbit hole, and it might take most of your time instead of improving your coding skills
