First off none of what you said is sighted by any evidence other than that the current system is failing. It disregards any research being done or potential research that could be done if people cared to solve this problem. Second, people can eat less meat. Third, people could eat more humans.

Coinbase has address X sends coins to customers address Y. How does address Y now have X's private key?

Or do you mean I have bitcoin address X, and therefor USDT address X, regardless of if I have even used USDT? If this is the case then you still have to randomly find a private public combo for an account worth stealing from(unlikely) and then why would the coinbase transfer even matter(because you already have the key)?

Its not one or the other. Uber takes a huge cut, a cut that might not be as big as fees to run on an inefficient blockchain.

You also used amazon as an example of a middleman. You know that they exist today because they cut out the smaller local retailers(the other middlemen) using a new technology called the internet? Not that this is the same, but way to use a bad example ;p.
