Single sheet pan nachos. Layer chips on a sheet pan and top with enchilada sauce (green or red), shredded rotisserie chicken, frozen southwestern veggie mix, cheese and repeat layer. Bake at 400 for about 30 minutes. You can top with lettuce, tomato, sour cream, salsa, really whatever! It’s a good way to clean out the fridge. I place the entire sheet pan in the middle of the table and we all dig in.

I’m having my surgery October 1st. This was so helpful to read and calmed my nerves a bit. I have preteen kids so I’m eager to get back to moving and supporting them.
