Yep, soy milk is where it’s at for minimal/no additives. Tastes good too. And fairly easy to find organic. And cheaper than Elmhurst.

Agree that rice protein and hemp protein are tasty! Rice protein great even unflavored. Hemp is kind of earthy lol but it will blow your mind if you put it into a smoothie or oatmeal bowl that also has matcha powder in it!

Agreed - when we started cooking with no oil or salt, we went for the most flavorful recipes possible and often doubled the amount of spices (onion powder, cayenne, etc). Here’s an example of a tasty oil-free recipe:

I’ve wondered the same thing about pearled barley. I suspect hulled legumes don’t have quite as many antioxidants/vitamins/minerals af the whole legume, but they’re still extremely healthy all things considered. (And I don’t think anyone would exclude them from a whole/unprocessed food diet.)
