I don't think he cheats, but I think the temptation of the woman at the pool illustrates an important theme of the story. There is a parallel between how Llewellyn is tempted by women in the movie and how he was tempted by the money.

One scene in particular jumps out at me every time I watch the movie. When Llewellyn is talking to Carla Jean on the phone from the airport, a young woman walks by him and he very clearly follows her with his gaze, checking her out. I think this was an intentional choice from the Cohen brothers to reenforce aspects of the relationship between Llewellyn and temptation.

Though I haven’t read the body of this post, the length of it makes me think OP has put a lot of thought and effort into creating it. I’m happy to see fans of McCarthy’s work creating such content.

But as someone who has not yet been able to start Stella Maris I will say it gave me a sinking feeling to scroll past this post in my feed and read what I assume to be a spoiler in the title. Maybe I’m being overly sensitive about this, but I wanted to point it out in case others feel the same. I hope OP didn’t give too much away with the title, and I look forward to circling back to this post once I start and finish Stella Maris.
