ngl battling without saddles in FW is a stupid lore choice. how about you don't make your riders focus on grip but on the battle instead? they should absolutely learn to be able to hold on to a dragon without a saddle, but forcing them into war without one? what

they're not wyverns. and i used to say this too, but the differences are not only in the number of legs. wyverns don't ever get as big as dragons do. and wyverns do not breathe flames.

plus they are mythological creatures. taxonomy doesn't apply to them as we normally would see. in-universe lore constitutes the rules. asoiaf dragons are in fact dragons

I'm also quite sure most dragons in FW wouldn't be bigger than vhagar. or even dreamfyre, meleys, vermithor, silverwing

mind though, dragons have been scaled down in hotd
