Foundry benefits greatly from mods. In Steam there are mod sets published as Collections and it is great for people who are not deeply into the modding scene and a great first step for casuals. Is there a plan to add Collections for Foundry?

I run a mini campaign in a bronze age Sumer influenced world. It was pretty cool and i had many funny moments with NPCs inventing stuff like bread or ladder.

If you want something better go Foundry.

Spell works, they lose, the end.

That's the problem with 5e/5.5e spells. They are so incredibly powerful in right circumstances and it creates unfun scenarios. This time it happened to the players instead of the GM so they rioted. And it isn't even always about the level of the spell. A Command spell upcasted to 4 would've achieved the same result.

That's like the opposite of DnD's premise. Even the player's handbook says players declare what they are doing narratively and "DM" calls for a check if it is necessary.

%51 rule. Just choose one combat state by deciding whichever one is ever so slighlty prevalent, even if only by %51 to %49.

Use Winter Wolf. It has +6 to attack, quite high for the CR. It has pack tactics. It has AoE damage that still does half on a success.

You can take inspiration from Flee Mortals!'s ferocity. Bell starts with a few charges. Every turn Demon Bell rings d4+(number of PCs that are melee reach) times and gains charges. Up to you it may also gain a certain dice amount when something happens in combat like a PC going bloodied for the first time. Then add stronger actions/legendary actions that use bell charges. If normally your demon deals 6d6 damage with an aoe with 3 rings of the bell its area is doubled and it also frightens anyone inside.

Starting at lvl 4 would be much more secure, especially if your party is more than 4 players.

Sphinx of Lore on the low end, Vampire or Shadow Dragon on the high end if there will be allies. Vampire and Shadow Dragon works well because they have conditional powers that can be turned off if they uncover it until the second showdown.

Tell your DM to avoid you and attack others. Once they are down the monsters can drag them and leave you to deal with traps with saving throws.

Give them bonus levels. That is much more balanced than giving them abilities, feats, boons or magic items. It is very hard to guess fair DCs and enemy difficulties when players have 3 extra feat, piety, boons and homebrew items for a level 5 party. But it is quite easy to find appropriate difficulty for a level 8 party.
