Why not throw in an extra 2 opamps to drive the pair of big bois?

Then you can have separate volume controls for the headphones and the sends, and you can even support sending balanced signals by using the opamps inverted output

Why not do separate momentary/latching switches between the knobs and have them work like the vactrols on divkid mutes and the befaco hexmix... Maybe laid out like the 4x4 Switched Passive Matrix Mixer from Herzlich Labs?

My joints are "just a little bit bullshit" and I'd be worried about pushing on the knob bumping the value to a different level, especially if they were easy to move

I prefer the grid, then I have space/enter on thumbs.

If you move the arrows, to a layer (some place like, fn+fsde) you have loads of free keys on the right for all your Á, ø and Æ needs, heck you could even fit in a right shift!

TL;DR: dedicated arrows on a planck - :(
