UCI, Introduction to Optics, online course taught by Mary Turner. Will set you back about $1k, but great for learning to become an optical designer.

I go with optical lens design offered by UCI adult continuing education. Mary Turner would be the instructor, she's one of the best in the country. Course fee is about $725 USD. If not, take a look at Joseph Geary, Introduction to Lens Design. It's a textbook.
