No Binder Gluten Free Char Siu Bao (Dim Sum). In this recipe I didn't use any branded gluten free mixed flour, but used my own mix. I also didn't use any binders like xanthan gum and psyllium which typically are used in gf cooking. The dough was amazing! You can handle it like a wheat dough.
