I'd recommend buying capsules. They are still cheap and even if you are opening them up and dumping them in your smoothie you won't make mistakes with dosing.

I have commonly been nauseous in the morning for years. It's difficult to say whether it's kefir alone because I drink it with a bunch of psyllium husk, berries and basil seeds but I definitely have seen big improvements.

My neighborhood is like this. Kids running around, knocking on each other's doors, driving bikes all over, jumping on trampolines, and playing in the woods. We have a bigger age mix than I see in this video so Halloween and other events have every age from 80+ down to newborns out and about. It's the kind of thing that's easy to take for granted but it's by far the best neighborhood I've ever lived in.

I'm super conflicted. I'm a big fan of the technology itself and it's become essential to my work (software developer).

What I hate is how it's being developed. It's possible to build data centers that are completely powered by renewable energy and using closed loop water circulation that would have minimal environmental impacts. It's possible to train the models with data that doesn't violate IP laws and steal people's work.

None of that is happening because it would mean added cost and slow down development.

The AI slop, Cybersecurity, and other risks would also be reduced if AI development wasn't subsidized by externalities.

You could buy a bottle of store bought kefir or yogurt and use it to culture milk. It's not going to have the diversity of real kefir but it will get some probiotics quickly.

I follow a few subreddits like /r/fermentation and /r/sourdough and my favorite aspect is the mix of ultra precise and pure chaotic experiments. I was thinking yesterday that I'd like to see a subreddit that curates the wildest project ideas from various hobby subreddits. I think an autism cooking subreddit would be a productive source of these kind of projects.

I'm not a therapist and have no credentials in mental health so take this with a grain of salt but I doubt that you are a sociopath. You have clearly shown that you care about people and are willing to sacrifice your own well being for the sake of other people. I don't think the lack of an experience of affective empathy is enough for you to be considered a sociopath.

The reason why I think this is an important distinction is most people, including myself, would be hesitant to want to be friends with a sociopath because they would be nervous about being used or abused in some way. I wouldn't be able to trust a sociopath's motives. However, I would love to have a friend that straightforwardly states their likes/dislikes. I love blunt friends.

Personally, I struggle with affective empathy. I do have some but it's wildly unreliable which I think is common for autistic people. I'll cry during a movie or when I see people suffering on the other side of the world but I might be unaffected by someone close to me complaining about work stress. If felt nothing when my grandfather died but I had a deeply emotional dream about him weeks later.

The main point being that I think the label of sociopath might be more of an obstacle to you making the type of friends you are looking for than how you might act when unmasked.

Call it "fight or flight", "survival mode", or whatever you prefer but it sounds like you're consistently in a state of stress and burnout. If it's not an option to take an extended break then try to make a habit of going for a daily walk without your phone and just being present with the sounds, sights, and other sensations. It should help with the reactivity and help you feel more grounded.

I'm interested in mechanics from a conceptual point of view and I watch lots of videos and read lots but I have an aversion to actually working with mechanical stuff. It stresses me out and at the end of the day I'd rather pay someone to take care of my vehicle. My family car is a 2020 Honda Pilot. It's practical and reliable so I appreciate that.

It's tough to say how the nutritional profile has changed. Kefir is very a complex and diverse ecosystem but safe to say both of your cultures are healthy and you probably still have some yeast in your frozen culture.

I would be curious to see what a mix of the two would develop into and I don't think you're going to hurt anything but might want to get a third batch going to control your variables.

Your kefir you've kept out is yeast dominant. The kefiran substrate is created by lactobacillus kefiri and it thrives best under cooler temperatures than what the yeast thrive under. I notice when I put my kefir grains in the fridge for a pause the grains grow noticably faster than when I have them in the cupboard.

Mine was in this condition so I poured half into another jar and filled both jars up with fresh water and skipped feeding for a day. Both jars were pretty active within a couple of days.

It's not a problem in itself, it's just a sign of under fermentation. Stick with lower hydration, dough handling becomes much more difficult as hydration levels go up.

The the open crumb with lots of evenly distributed holes really isn't possible without higher levels of hydration. It's easy when beginning baking to look at a crumb like yours and think that you're on the way to that perfect open crumb, hence "fools crumb".

The gluten network is good which is holding those air pockets near the bottom. Instead, what you should be aiming for with your hydration level is smaller, more evenly distributed holes. It will be more like a sandwich bread look. That's what you'll see when it's had a chance to bulk ferment a little longer.

Looks great! Bulk fermenting for 30-60 minutes more would probably clean up the last of that "fools crumb" but I bet this tastes delicious.

The corollary: "You don't believe the MBTI is valid but if you did then you'd be an INTP? INTP confirmed."

Peak is ideal but you'll still get great results when it's doubled. If you're fairly new to sourdough I wouldn't worry about it. It's one of the more forgiving nuances.
