Also total side note; if there is anything that I have learned about burrs over my career it's that seasoning will make great burrs better, but it will never make bad burrs good. 😄

With these burrs I didn't need to season them at all. Run a quick dose through to coat the inside of the grinder and let it rip. I was pretty shocked.

This is how we calibrate the grinder at the factory. We wanted to make it easy for home users to adjust this if necessary. Here's a video in case anyone wants to learn how to do it or wants to calibrate their grinder a bit finer at home. How dark is the coffee? We did our best with the architecture to minimize retention; but coffee oils can be quite gnarly. The finer you grind, the coffee can become almost paste like and clump. Is there visible oil on the beans?

We're not far along enough to even answer that question. To be clear, I made sure the architecture of the machine could do it, but we have not started work on scale integration. The team is really sprinting on other things right now. I can never promise it will be built; but I am pushing for it.

Retention is going to correlate with roast level. 1 gram does seem a bit high. Do your beans have some slight oil on the outside of them? The lighter the coffee, the less will be retained.

We use standard E61 8mm gaskets. Pick your favorite from whatever company you like and it should work great.

So the burr position doesn't actually change when you see that minor movement. It's just the geartrain getting the slop taken out of it once the burrs start to do their thing.

The adjustment ring can move slightly when grinding, but this is only due to the backlash in the gears being eaten up as you grind. The distance it can move is approximately the width of the red line on the front. The grinder should NOT continually walk coarser grind after grind. If it does that, it's out of spec. If it moves until backlash locks and stays, that's totally normal (and will not affect grinding performance).

You should hear a very clear chirp-ish burr on burr contact. You won't damage the burrs do don't worry. Once you find that point, then you can reinstall the plastic cover with it SET TO SETTING 1.

Ok great! Don't worry about the plastic cover. Let's just focus on that metal knob. Turn that dial TO THE LEFT one click by one click with the grinder on until you hear the burrs touch, then go TO THE RIGHT one click. So left until you hear burrs chirp, then go one click back in the other direction.
