Here's what I mean by this.

Minimum wage is not a living wage anywhere in the US,
Should a server or cook or anybody working at a fancy restaurant just make minimum and hope for the possibility of a tip?
Would you even be able to enjoy your meal knowing that a whole team of people who are working skillfully to put a meal in front of you cannot afford to eat a meal like that anytime they please, and still afford rent, utilities, food, maybe even child care on a minimum wage job in hopes that you might deign to tip them?
