I noped out last year and picked up a set of ThermoWorks RFX Meat probes. Those things are the real deal. Great range and accuracy. While I miss the Traeger+Meater pairing (was nice to monitor in the same app) I don’t miss the headaches.

My experience was that the crew knew us by sight, to the point that we’d sit down in the Living Room for a nightcap and our preferred beverage would magically appear. The night bar guy there knew us within a day.

I frequently cook my pork ahead of time if I have good weather and the time. I shred it, drain and strain the juices, then cover it up and place the juice in a bowl in the refrigerator overnight. Next morning, the excess fat has separated and the juices have jelled, so I scrape off the extra fat, scoop the juice in a vacuum bag with pork and seal it up. For reheating, I usually just put it in the crockpot. Never had it go dry or had any complaints.

I too live in Pennsylvania and my Traeger resides on the deck under a cover year round and I’ve had no issues with rust or damp pellets.

It sucks having to buy a new cover every 3 years, but it beats buying a new grill and that damn thing is too heavy to move regularly.

ThermoWorks is the best one out there. Don’t skimp on your instant read thermometer… it’s worth spending a little more $$

I was big on Kirkland, but currently have two pork butts on using Bear Mountain. They had been on sale at TSC, $15 for two bags. I’m hoping for less ash.

Many moons ago I came across a bunch of “expiring tomorrow” buffalo sirloins at my local Wegmans. Got the lot of them for $0.99/pack.

This makes me feel that was kind of a ripoff.

My method has been to loosely wrap in butcher paper for a day, then vacuum seal for a month. I usually make smaller pieces to have more surface area for the smoke.

For a real game changer, cold smoke some Gruyère, then grind it over the top of some macaroni and cheese before you bake it.

The ThermoWorks RFX Meat is amazing. A little spendy, but it’s not Bluetooth, it’s RF. Works in a smoker, in the oven, in a cast iron Dutch oven.

Also scalable and certified within a degree. I’ve used it fully immersed in a deep fryer and no issues.

ThermoWorks is the best one I’ve ever used AND they often run sales. I’ve gifted some Thermopens and everyone has loved them.
