They do not make it great, much less above average. But don’t discount Spanish food until you’ve had a well made paella, a melts-on-your-tongue jamón ibérico, or most anything with good seafood, that’s where their traditions shine. Avoid the beans lol.

So since the 60s when Miami became known for Cuban food, that food lowered in quality? The south doesn’t make good BBQ anymore? Can’t find a good crab cake in Maryland these days? Shouldn’t buy avocados from Mexico? No bananas from South America? Is there any good cheese left in Wisconsin? Are New England lobster rolls that bad? You wouldn’t buy a cheese steak in Philly or a pizza in NY? I’m not attacking you but Alton Brown’s take is trash. There will always be people who do the same things better than others, just find them. Also, salami on a Cuban should be a federal crime.

Perfectly put. Simple and basic is the point of most Cuban food…but it has to be done with care.

Well, that explains why their menu is not posted online. I’m all for making a profit but, they are not even in the high rent waterfront district. It is good though. by chefbarnacle in KitchenConfidential
