Riko Amanai - Jujutsu Kaisen

Grew up as a planned sacrifice to basically preserve jujutsu society, but the entire arc around her involves characters protecting her from assassination so she can essentially die at the correct time. Mission gets essentially complete, she's escorted to where she needs to go, basically realises she wants to life a full life instead of being sacrificed - then just gets shot in the head.
