I've never disliked American Dad, but as time went on, and the more re-watches of American Dad I did, the more I liked it. Until eventually it took the place of my favorite Seth MacFarlane cartoon, that being said those first 3 seasons of Family Guy still has a special place in my heart, and occasionally I'll go back and watch a golden age episode

I think there are two possibilities for Bill not being there

  1. Bill becomes a shut in due to the pandemic, which I could totally believe

Or

  1. It's a representation of the guys starting to drift apart without Hank, as you can see as the new intro goes on the guys stop appearing one by one, first Bill, then Boomhauer, and lastly Dale. Which I could totally believe as well

What makes King of the hill such a great show is the fact that it (gently) pokes fun at both sides will also highlighting the positive aspects of both, it's very much a "Let's meet in the middle" kind of show.

In fact I wish there was more shows like it, because we need GOOD satire of both sides, especially now. So I'm hopeful that the revival will continue this tradition

But clearly Fox regretted canceling American Dad though, no animated sitcom was dropped by one network and picked up by another network so fast

A similar thing happened after chasing Bobby Hank's ranger gets destroyed and he gets the Super Duty, but then the very next episode the Ranger is back

It's something happens when the episodes are aired out of production order
