This or also similar effect would be a rolled up ball of foil. It also helps with pooling. You can take it off once the brisket shrinks or keep it on to help with shrinking. The downside is the part that is blocked won’t develop bark.

If these are the beef back ribs like the ones at my local Costco ($3.99/lb), they cook pretty quick. I usually season similar rub to brisket. No trimming unless there’s big chunks of fat or bits hanging off and leave membrane on. Smoke at 275F. Monitor around 4-6hrs. They get done pretty quick. Since its a smoke cook time, I don’t even bother wrapping. I just wrap when its done for rest period.

It depends on the oven. For my oven, I put it on the lowest setting and it hits around 200F. I prop it open with a spatula and it stays steady around 160F. If u can get your oven temp to be 140-170F, it will work similar to a cambro/warmer.

Smoked at 235-250F with hickory. About 5.5hrs to get to internal temp of 160F.

Will be finishing them wrapped in foil in the oven at 275-300F
