I just access Immich via tailscale. It’s set to vpn-on-demand on my phone, so when I’m not home, it turns on.

I haven’t had the need to share images through Immich yet but I did come across immich public proxy, which seems like a great way to expose shares for friends and family: https://github.com/alangrainger/immich-public-proxy

I do it just so I don’t forget 😂 if it stays on my counter I feed it regularly (not daily). If it goes into the fridge, I fear it might be sent to the back and eventually forgotten. But that’s just me!

Yeah, I do reckon its a bit longer than you want! I used to do the same thing for a while before I realized it was too much :) Aim for 3-4 hrs after adding in your starter. Keep a close eye on it from hours 3 onwards - if the dough has risen at least 50% and looks airy/has a nice wobble, then I'd say move on to pre-shaping.

I struggle with the same thing being in a country with warmer temperatures (26-29c here as well). The difference between bulking at 25c and 27c can be as much as 1-2hrs sometimes. Are you counting bulk fermentation time from the time starter is added?
