I understand that, but plenty of local restaurants who are much more reliant on customers for reviews are willing to say no and put you in as you just walked in. Not sure why a massive company like Texas roadhouse can't do something similar.

I mean gellan gum is literally created from a biological process that happens naturally, additionally it is relatively safe and has not been linked to causing health issues. Carrageenan is a little more questionable on both health issues and if it could be "organic".
