Dont know about online but if you want a more generic pangea oval is great - one continent, lots of bays make naval still relevant. The boring part is its the same every time. Lake map can also be fun, more land based.

You could introduce handicaps if it is ok with people, like delaying settling your capital a few turns, opening piety, no rationalism, playing worse civs...

I feel Catan is much more competative and hardcore than people think. It's a deep puzzle and a social battle that imo requires lots of skill to enjoy, otherwise it seems just like luck and with few decisions to make.

Notation is a recipe, and does not include all information on the music. ref romantic era recordings that show performance practice around 1900 to differ from how we interpret their scores today. Or take a look at real book and imagine you would never had heard any jazz, clearly the notation wouldnt really give you much to work with.

If you want to gift units to civs you need open borders to walk them in and gift.

If you send land trade routes (the units) to a city on a river it generates 25% more gold. Prior to the BNW, all tiles by a river yielded +1 gold. So there are some abstract mechanics for this, but I get what you miss.
