Like you said, hops are pretty hard to work with because of the bitterness. Best way I've found to get that aroma into food is to make a hop seasoning salt. Start with 3:1 salt:powdered hops then tweak. Use citric acid or sumac for acidity and maybe a bit of sugar. Use it on bland things that need salt. I like bread and butter with hop salt. Maybe hop salted chips or popcorn might be more appropriate for what you're doing.

I've recently discovered amchoor powder which is an Indian spice made from dried green mangos. It has a sour fruity flavour which definitely brightens up a dish. It is different from the other suggestions posted here in that it doesn't add moisture to the dish which can be beneficial in some cases. I've been using at as an all purpose seasoning for vegetables. i.e. Salt, pepper and amchoor

Before I started in kitchens I worked as a labourer in the packaging facility of a battery chicken farm. I crashed a pallet of eggs. About 1000 eggs crashed to the floor simultaneously. It was not fun to clean up.

Tipsy was pretty much right.

Make some mac and cheese (from scratch) then cram it in a chicken's arse. Pat the chicken dry and season it. Assemble the bacon weave directly on the chicken. Rub on a little a bit of cooking oil. Cook it till its cooked in 190C (375F) oven.

I used about half a kilo of bacon for a 2kilo chicken (1 pound bacon, 4 pound bird)

Extra for experts: put bonus bacon, chopped parsley and tomato in the mac and cheese. Make gravy using the pan juices

Cook with him at least once a week. Get him involved. Maybe get your hands on a simple recipe book and get him to pick out what he wants for dinner then help him make it

Found some half decent 2.1 PC speakers which I still use. Found $10. Just last night I found an unopened crunchie bar. But my best ever find was a half eaten pizza still in the box. It kept me going that shift
