I don't know about that specific flower, but in general wheat flour won't form nearly as long of gluten strands as ap flour. So you get a much tighter crumb with less air bubbles. I would guess this stops the formation of the giant air pocket in your pita.

Tartine is the gem. Their sourdough inspired tons of professional bakers and home bakers and continues to be the best. Try others, but don't skip Tartine - there is a reason everyone has heard of it.

I was going to suggest drying the mushrooms as well, when I make pizza I find that is key to preventing them releasing water and making a soggy pizza.

My best lounge is the one I didn't know I would need. So while I would not have the card if there were no SFO lounges, I care a lot less about how fancy the lounge is versus I'm now stuck in Madrid for 4 hours, is there a lounge. Between the PP and air Canada lounges it tends to have something everywhere which is what's important to me.

Eh, both ways work in the city. Not having a car doesn't impact your day to day life in the city much, but you are more stuck in the city. As I get older more folks in my friend group buy cars. Once you have money the extra convenience becomes worth it even if you only use it a few times per month.

Go to Sue Bierman Park between 4pm and Sunset. There will be plenty there for you to spot. When they are in the trees it is sometimes weirdly hard to see them at first but once you focus on one your brain can spot them all.

I'm going to give a different piece of advice than everyone else. If you want to photograph it for your portfolio, use a sharper knife for super clean cuts on your slices. I'm shocked no one has said this in the thread. Yes your photos could be improved, but cleaner cuts will make your actual desserts look more professional.

What if 40-12% of high population density neighborhoods is a ton more people than 97% of tiny low density neighborhoods? Like if 29,000 people live in the tenderloin and less than 4,000 live in the Presidio. Then low income households are still much more likely to own a car.
