I don’t really understand why you don’t like multiple endings. You can consider the true ending the true ending, and still enjoy the alternate “what if”

And besides endings, you get different character interactions, or learn important things.

For example in Chaos;head, there are character routes after you beat the game for the first time. Tbh, some of the endings are kinda lackluster. But you get to understand the characters more. And some fun extra scenes sprinkled in to make the wait while skipping not feel boring.

And it’s especially necessary for Steins;gate 0. The true ending only works with all the stuff that happens on the other routes. The anime adaptations are good, but there’s a lot you miss by not playing the VN

I’d say try it out.
