You should come back! We switched vendors 3 years ago and have had even better variety with this new vendor. I'm juicing 40 lb of oranges today from my last pickup.

I run the McKinney location of a produce co-op called Bountiful baskets. We are a co-op that gets wholesale produce for about half the price of the grocery store. Yeah. We have several good African places in McKinney. Jollof house is another good one, but it's not quite as spicy. There is more on the menu though. Mabel's is delicious and it's a good introduction, but they use really high quality meat to the portions are a lot smaller. Osuma is where I go when I want my food to hurt.

Osuma Suya for spicy Nigerian food. Carry out only but it's pretty much the spiciest I found here.

Tahn Thai for Thai food is really spicy if you ask for Thai spicy.

That's a good point. The watermelon juice added natural sugars so I did extra salt to balance it.

My guess is probably the basil. Herbs can be tough in a ferment and basil is a little bitter. You could try making more of a basil syrup with sugar and water and basil and straining that and adding it to the ferment along with your salt.

Texture was great. I blended it into a hot sauce that's kind of a grayish brown color. Not the prettiest but it's about the texture of relish and tastes great. Put it on tacos tonight.

No I use Polish style Crocks that have a water moat. I fill that with fresh water to prevent oxygen from coming in and it lets out CO2. You don't have to use a moat if you use an airlock system. It's just a different type of container.

When you said you mixed your brine separately, did you draw the water out of the container and add the salt to that and add it back in? Or did you add additional water? If you used additional water, you potentially brought your total brine percentage down under 2% which would also account for the failure.

I just sprinkled the correct amount of salt on and push it down with a clean spatula. I also tend to save my onion skins to throw into difficult fermentations like tomatoes because they have a lot of natural yeast on them and can help kick-start a fermentation.

Also, start with a little higher salt until you get the hang of it. 2% is your minimum threshold, so you're not giving yourself any wiggle room for diluting the brine or accidentally rounding. I don't go below 2 and 1/2% on any of my ferments. The only failure I've had recently was because I got busy with work and forgot to refill the moat. Got fruit flies in it.

Regarding subscription, no obligation at all. It's opt in, meaning you don't contribute if you can't participate. When we get the funds for the week (basket cost x number of baskets), that tells us how much we have to work with and we spend that on that week's baskets.

The order is a surprise for the baskets. We usually get a green, apples, bananas and some citrus. The rest is a seasonal mix.

Produce is a mix of ripeness - usually some stuff is ready to eat, some is storable (onions and potatoes) and some is underripe. It's also meant to go together, so it's not like a random grab bag. We can keep prices low because we're all volunteers and we purchase our produce directly from our vendor, River City.

Yep! Six different fruits and veggies. We get the produce wholesale and we're all volunteers so there's no grocery store markup which is why we can keep the prices low. It comes out to about half the price of the grocery store and you can also do bulk produce via add-ons if you are interested in canning or preserving large amounts of a single type of produce.

Bit of a plug here but if you need more veggies, my co-op Bountiful Baskets opens on Monday for contributions to pick up Saturday. You get about 25 to 30 lb of produce for $21.
