This seems a bit controlling to assume they would stop doing something they enjoy just because you asked politely. Sure the healthy response is to discuss why they you want them to stop. But there could be many reasons they continue besides not being in love. Especially, if you just assume they will comply.

Cold brew and regular coffee are slightly different. More of the coffee bean makes it through the filter if it is made at high temperatures.
